SEPARATING TRAYS
Stacked Gelato Trays can sometimes fit into each other tightly. Do not try to separate them with your bare fingertips/hands. Wearing gloves, you can use a Red Handled Gelato scooping spoon to gently lever/pry the trays apart, ensuring that you do not bend or damage the Napoli Tray rim.

LIFTING & HANDLING GELATO TRAYS
Wash and dry your hands and wear gloves.
Never lift or carry a Gelato Tray from the Edges/Rim of the tray.
• Place your four fingers of each hand under the base of each side of the Gelato Tray and place your thumbs over the top of the tray sides.
[Remember that hands are regularly washed in warm water throughout the gelato-making process. Your skin is actually softer and more delicate when it has been wet for a prolonged period – this is why gloves are necessary to protect yourself from potential injury].

LIFTING GELATO TRAY FROM BATCH MACHINE TO WORK TABLE & TO BLASTER FREEZER
• When you have prepared Gelato, a Medium Sized Tray can weigh 5-6Kg, a Large Sized Tray can weigh 7-7.5Kg [Gino’s does not use the Extra Large Napoli Trays for safety reasons].
Wash and dry your hands and wear gloves.
Never lift or carry a Gelato Tray from the Edges/Rim of the tray.
• Place your four fingers of each hand under the base of each side of the Gelato Tray and place your thumbs over the top of the tray sides.

CARRYING GELATO TRAY TO GELATO DISPLAY FREEZER
• Ensure you have a clear path from the Gelato Preparation Area to the Gelato Display Freezer Area [no obstacles or people in the way].
• Ensure that there are no slip & trip risks in the way and that the floor is dry and safe.
Wash and dry your hands and wear gloves.
Never lift or carry a Gelato Tray from the Edges / Rim of the tray.
• Place your four fingers of each hand under the base of each side of the Gelato Tray and place your thumbs over the top of the tray sides.
• Carefully place the Gelato Tray on the Back Edge of the Display Freezer. Ensure it is balanced and firmly resting on the surface.
Open the Gelato Freezer Screen.
Remove empty neighboring trays, or carefully slide Napoli Trays containing Gelato aside, so that you have access to both sides of the fresh Gelato Tray you want to insert into the Freezer.
• Place your four fingers of each hand under the base of each side of the Gelato Tray and place your thumbs over the top of the tray sides.
Place Rim / Edge of the Front of the Gelato Tray onto the Separator Panel / Support Strut [at about a 30⁰ angle]
• With both hands on either side, gently lower the Tray until the rear Rim/edge of the Gelato Tray is resting on the Separator Panel / Support Strut closer to your body.

RETURNING GELATO TRAYS FROM DISPLAY FREEZER TO KITCHEN
• Ensure you have a clear path from the Gelato Display Freezer Area to the Kitchen [no obstacles or people in the way].
• Ensure that there are no slip & trip risks in the way and that the floor is dry and safe.
Wash and dry your hands and wear gloves.
Remove empty neighboring trays, or carefully slide Napoli Trays containing Gelato aside, so that you have access to both sides of the Gelato Tray you want to remove from the Freezer.
• Place your four fingers of each hand under the base of each side of the Gelato Tray and place your thumbs over the top of the tray sides.
• Carry Tray to Kitchen Area.
• Carefully place the Gelato Tray on workplace surface/table. Tilt front end of tray down first and slowly lower back end, avoiding the Rim / Edge and ensuring your hand are not caught under the tray.
• After preparing Gelato for backup storage, open Back-Up Freezer, then lift Gelato Tray by placing your four fingers of each hand under the base of each side of the Gelato Tray and place your thumbs over the top of the tray sides.
Place the front of the Gelato Tray onto the Freezer Shelf and carefully slide into unit.
• When placing Gelato Trays into the sink area for cleaning, do not stack them up high within each other and/or drop them into another tray – there is a risk of your fingers getting trapped under the Rim / Edge of the Tray and being injured.
Carry and wash trays one-by-one, and avoid handling them by the potentially sharp Rim / Edge.

OBJECTS FALLING FROM A HEIGHT RISK
Gelato Trays stored on an over-head drying rack, on an over-head shelf, on a Freezer-top pose potential bodily, head or eye injury risk – particularly due to sharp edges. Always ensure Gelato Trays are handled and stored safely and with extreme caution.

IMPORTANT PRECAUTIONS
• Handle the Gelato Trays in a controlled, steady way, gripping it firmly with both hands as often as possible
Never Drop the Gelato Tray into position in the Display Freezer [the force of a Tray being dropped onto a Separator Panel / Support Strut is considerable and like a ‘blunt guillotine’ could cause serious skin lacerations and/or potential fracture to finger bones (phalanges)].
