HOW TO MAKE CREPES
1. Check the machine temperature is correct: 170° C
2. Apply Spray-on Olive Oil to Crepe Application Pad (2-3 squirts) and distribute evenly over the Crepe Machine’s heating plate.
3. Stir Crepe Mix in Jug with the ladle and pour out onto the center of the Crepe Machine’s heating plate.
4. Empty a complete ladle-full of Crepe Mix
5. Starting from the center Crepe Stick Spreader to extend the diameter of mix outwards
6. Evenly distribute mix by lightly spinning the Crepe Stick Spreader over the mix
7. Distribute Crepe Mix with circular motions until you are within 1cm of the Heating Plate’s perimeter
8. Lift the edge of the Crêpe to determine if it is ‘golden brown’. When ready use the Spatula to flip the Crepe
9. Place uncooked side of Crepe onto the heating plate and start adding toppings as per customer’s order
10. Apply toppings on one half of the Crepe only
11. When the second side of the Crepe is ‘golden brown’, fold it in half
12. After folding the Crepe in half, fold it into a quarter
13. For the final fold, fold the Crepe approximately 4cm off the centerline. (This makes the Crepe wider at the bottom end allows it to sit higher in the Crepe Holder).
14. When crepe’s ready, using the spatula, slide it into the holder ensuring not to touch it with your hands.
15. Add final toppings (if applicable e.g. Cream (White Ferrari / Oreo Crepes) or Lemon Juice (Traditional Crepes)
16. At the very top of the Crepe, sprinkle a little Icing Sugar for decorative effect.
17. Serve the Crepe holder with a Gino’s Crepe napkin (Gino’s logo facing out). If the Crepe has a Cream topping, you should ask the customer if they need a fork.
18. You can mention to the customer the Crepe Holder is perforated and it can be torn around to access the lower part of the Crepe
