Crepe Mix

4kg Ginos Crepe Powder
6.4 Liters Water
80g Butter

Preparation of Mix

Put 6.4 Litres of Water into a Large bucket
Place 4Litres of Ginos Crepe Powder into a seperate container (This allows you to remove powder if accidentally added)
Using the Stick blender start to mix the water
Slowly add the Ginos Crepe Powder, ensuring the powder mixes with the water leaving no lumps.
Melt 80g of butter and add to the mix.

Cooking
Ensure the waffle Crepe is hot and set at 170 degrees
Using the oil pad, smear the surface with oil
Using a Steel Ladle 35mm
Pour 1 Spoon of Liquid on the hot plate
Using the T bar in a rotation manner, spread the liquid over the plate
Try not to allow the liquid to go down the side of the hot plate (Less cleaning later)
Using your own judgment, allow the crepe to cook for the appropriate time.
When ready use the steel spatula, slide under the crepe to ensure it is not stuck
When released, position the spatula in the middle and raise the crepe
Now turn the crepe over
You can start to apply the toppings as requested

Cleaning
Clean as you go
Once a week clean with the stone
