The Display Freezer must be turned off and fully defrosted
Deep Cleaning of the Display Freezer is usually done once a week pre-opening, in the morning.
Always wear gloves when deep cleaning machinery or equipment.

What You Will Need
• Wet & Dry Vacuum Cleaner
• Steam Cleaner
• Red Micro-Fibre Cloths
• Hot Water (less than 5 Litres)
• Pliers / Screwdriver
• Oasis Pro 20 Premium Solution (Ecolab Disinfectant)

Internal Freezer Cabinet Parts That Need to be Removed
1. Front Grill / Airflow Vent
2. Front of Cabinet Separator Panel
3. Middle of Cabinet Separator Panel (bolt / screws)
4. Rear of Cabinet Separator Panel (bolt / screws)
5. Base Panels (at bottom of Cabinet)

After Disassembly and Removal of Internal Freezer Cabinet Parts
Vacuum up all small pieces and debris from the interior of the cabinet
The 1. Front Grill / Airflow Vent; 2. Front of Cabinet Separator Panel; 3. Middle of Cabinet Separator Panel; 4. Rear of Cabinet Separator Panel *and *5. Base Panels (at bottom of Cabinet) should all be washed in the designated Kitchen Sink – use hot water, Ecolab Click Washing-Up Liquid and after wash wipe-down with Oasis Pro 20 Premium Solution and a Red Micro-Fibre Cloth.
Use the Steam Cleaner to clean out the grill / cooling fins in the Display Cabinet.
Use the Steam Cleaner to clean out any debris from corners and joints.
Use Hot Water to flush out and rinse the grill / cooling fins in the Front of the Display Cabinet
Do not use excessive water. 5 Litres should be sufficient.
Never pour water into the rear part of the Cabinet where the fans are located.
Use Wet & Dry Vacuum Cleaner to ‘Hoover’ up water from the left and right Drainage Pipes leading under the Display Cabinet.

Dry & Clean
When the interior of the Display Cabinet is rinsed and cleandry with Red Micro-Fibre Cloth & Blue Paper.
Use the Oasis Pro 20 Premium Solution to wipe down the* interior* and on top of the fans.

After Gelato Display Cabinet is Clean & Dry
Before reassembling the Gelato Display Freezer, turn on the freezer and wait for the internal cabinet fans to turn on. It is important to check and see that these are working as they are responsible for circulating the cold air in the display.
If any of the cabinet fans are not working, this must be reported immediately to Gino’s Maintenance (a portion of the freezer is unlikely to hold the required temperature for Gelato due to the cold air circulation being affected).

Photograph Freezer Interior & Components
Photographs of the cleaned components of the freezer and the cleaned interior of the cabinet must be taken and posted on G.M Ginos WhatsApp Group.

Reassembly of Gelato Display Cabinet Parts
The cleaned and dried cabinet parts can now be returned and reassembled.
1. Base Panels (at bottom of Cabinet) 2. Rear of Cabinet Separator Panel 3. Middle of Cabinet Separator Panel 4. Front of Cabinet Separator Panel 5. Front Grill / Airflow Vent 6. Tray support brackets / struts 7. Clean & Dry Napoli Gelato Trays covering the entire display area. Ensure pull-down screens are wiped down and clean.

The Gelato Display Freezer is now ready to be turned on
Pull down screens. Set to the correct temperature

Condensers [Monthly Cleaning]
The Gelato Display Freezer condensers must be cleaned monthly and recorded on the Deep Cleaning Schedule. This will be carried out by Gino’s Maintenance. If cleaning schedule is overdue – notification is to be put up on Trello Maintenance Board.
