OVERVIEW: DAILY DEEP CLEAN – COFFEE MACHINE SCHEDULE
The 7 steps below are the essential requirements to keep the coffee machine clean, sanitised and maintained.
The Daily Deep Clean – Coffee Machine Schedule should be followed and completed daily.
Failure to follow the Cleaning Schedule will compromise coffee quality standards and may expose customers to a potential bacterial contamination risk i.e. residual milk in the Steam Wand. The Coffee Machine can also build up lime-scale residue, which can lead to expensive damage to the machine.
CLEANING PROCESS: STEP-BY-STEP – FULL PROCESS
- Take the other portafilter with the ordinary filter strainer and place it into the jug of boiling water
- Use the grouphead cleaning brush to clean the group head on the Espresso Machine. Scrub vigorously: the filter mesh and the housing where the portafilter locks into the group head. The nylon brush will not damage the machine.
- Be careful not to burn your hand – very hot water. If you are inexperienced wear Personal Protection Equipment (gloves)
- Press hot water release from the barista espresso machine
- Rinse the barista cleaning brush with boiling water
- Press the button on the espresso machine to turn off the hot water
- Wait for the hot water to stop dripping out of the group head
- Run the grouphead cleaning brush around the group head several times to remove any coffee grounds
- Keep hands away from group head – turn on the button for hot water to be released from the group head
- Rinse the grouphead cleaning brush under the hot water being released from the group head
- Be careful not to burn your hand – very hot water
- Press the button on the espresso machine to turn off the hot water
- Run the barista cleaning brush around the group head several times to remove any coffee grounds
- Take your hand away – turn on the button for hot water to be released from the group head
- Take the blind / solid filter and fit it into the portafilter
- Place one teaspoon of the Espresso Machine Cleaning Chemical powder into the stainless steel jug with boiling water holding the second portafilter
- Place one teaspoon of the Espresso Machine Cleaning Chemical powder into the blind filter
- Lock the blind portafilter into the group head
- Backwash process: Press the espresso Single Shot button on, wait for the water to circulate for 5 seconds then press the button again to turn the hot water off. Press the Double Shot button on, wait for the water to circulate for 5 seconds then press the button again to turn off the hot water. Press the Free Flow button on, wait for the water to circulate for 5 seconds then press the button again to turn off the hot water. Repeat this process at least 5 times (on busier days, repeat this process up to 10 times).
- Once you have finished backwashing – run the Free Flow button and wiggle the portafilter by loosening and tightening it onto the grouphead (this will help loosen any residue around the edges of the grouphead).
- Empty the solution out of the portafilter into the drip tray
- Rinse the portafilter with the blind filter out with hot water from the espresso machine’s group head
- Lock the rinsed portafilter with the blind filter into the group head and run 5 × 5 second ‘backwashes’ as above (we do not use any chemical for this cycle)
- Unlock the portafilter from the grouphead
- Release hot water out of the grouphead to flush out any chemical remaining in the machine: press the Single Shot button, Double Shot button and free Flow buttons in sequence, several times (this will flush out any chemical residue)
- Wait until there is not hot water dripping from the grouphead
- Take the clean green microfiber cloth and wipe the inside of the grouphead thoroughly
- Ensure there is no remaining residue
- Remove the espresso machine drip tray. Hold it at the correct angle to prevent hot water from pouring out
- Carefully take the drip tray to the kitchen – wash, sanitise and dry it
- Return the drip tray back to the espresso machine and secure it in position
- Take the stainless steel jug with the Cleaning Chemical solution and second portafilter in it and empty out the contents
- Clean, sanitise and dry the stainless steel jug and second portafilter in the kitchen sink
- Return the portafilter to the Espresso machine
- Using clean water in a stainless steel jug, run the Steam Wand. Never run chemicals through the steam wand. Run the steam wand for several seconds without it being immersed in water – hot steam is dangerous – always point it down and away from your hands and face. Wipe down the steam wand with a clean microfiber cloth. [Weekly: you should unscrew the nozzle off the steam wand and soak it for several minutes in a jug with hot water and a teaspoon of Espresso Machine Cleaning Chemical powder].
- Clean and polish the stainless steel surfaces and exterior of the Espresso Machine
