INSTRUCTIONS ON SETTING UP DISPLAY FREEZERS AT START OF DAY
  • Make sure the Display Glass is clean on the inside and outside.
  • Ensure the Front Grill inside the display freezer is pointing towards the back of the Freezer (the cold air must circulate over the Gelato)
  • Ensure the internal cabinet fans (under the Gelato Trays) are working. [You may have to wait a minute or so for them to start turning when the Display Freezer is turned on].
  • Ensure the separator brackets that support the Gelato trays are fitted correctly
  • The Display Freezer must not be left uncovered. Fill it up with empty Napoli Trays without leaving any gaps. As Full Gelato Trays are brought to the Freezer, then remove the Empty Napoli Trays.
  • Keep the Display Freezer Screens closed.
Displaying the Gelato:
  • When the Gelato Tray is brought to the front, it must always be labeled by a Name Tag supplied by the company. Under no circumstances is anyone allowed to hand-write a label, or write on the Tags supplied by Gino’s Gelato.
  • The Gelato Tray should always have a Scooping Spoon and this should be kept upright on presentation and after each time we serve. The Name Tag should always be upright – it makes a big difference to the standards of our display.
  • We put out Gelato Trays in a symmetrical manner, using the front rows of the display freezer first and fill out the fridge from the center outwards, and once the front row is full, we start filling the back row.
Colour Blocking: At Gino’s Gelato we differentiate our Gelato flavors by placing contrasting colors at either side of neighboring Napoli Trays. We do not keep all the ‘pinks’, ‘reds’ and ‘oranges’ together, or the ‘beige’, ‘creams’, ‘browns’ and ‘dark browns’ together e.g. we would not put Coconut, White Nut Ginoella, Raphaello and Vanilla all beside each other.

Profile Differentiation: Some Gelatos are dome-shaped and some are flat. We differentiate the profile of our Gelato, so that a ‘flat gelato’ is next to a ‘domed gelato’. Not all flat Gelatos should be together.

Special of the Day: When preparing the Gelato Display Refrigerator, a Special of the Day should be selected for one of the dairy-based Gelatos and one of the Sorbets. This is usually one of the freshest products, and usually not in the top 3 sellers. It is basically the Gelato Maker’s recommendation.
